Thanks for all the birthday well wishes. It was a god day with very little celebration--just the way I wanted it. I went and saw a movie after work and my wife cooked one of my favorite meals. It was so nice!

Well, it will seem rather boring to a lot of you. When I was growing up, we were definitely lower income. My mom worked hard to keep us all fed and on a budget. One of the things she cooked that I loved, and it is going to seem so simple to some of you, was meatloaf and Kraft macaroni & cheese. While it seems simple, there were times we couldn't afford even the Kraft mac n' cheese, so it was always so much more special.
My wife knows how much I liked it, and rather than go out yet again especially after we had just taken a week at the beach, she cooked for me. It was amazing!

I absolutely loved Kraft Mac n Cheese (especially as a kid). I can't have the cow dairy now, but I would likely still eat it on occasion if I could. I remember on occasion my mom or dad would make it and fancy it up by adding cooked (and sliced up) hot-dog pieces or even cooked hamburger...and top it off with some shredded cheddar cheese. Oh man great stuff. I loved it so much as a kid that my mom got sick of me asking for it for dinner. My dad was in the Army so he would leave town sometimes for training. This one time he was gone when I was in the 5th or 6th grade my mom decided to cure my love of Mac N Cheese. So the first night he was gone I asked if we could have Mac N Cheese for dinner. She agreed and I was so excited. The next night I asked what was for dinner and she said "Mac N Cheese". I was cool with that. On the third night she made Mac N Cheese again. I was much less thrilled to eat Mac N Cheese on the third night in a row. On the fourth night she asked me what I wanted for dinner and I answered "Anything except Mac N Cheese".
If I was old enough to know what she was doing at the time I might have reported her to Child Protective Services. What a horrible thing to try to squash the love of Mac N Cheese in a child.
