Today going to smoke some bone in chicken thighs. Have never done those so trying something new. Oh man that sounds great, how were they? Turned out nice and juicy. I was worried that the skin would turn out rubbery but I cranked up the temp the last 10 min to crisp it up. Turned out good! Will attempt a Boston Butt next weekend. Will prob take 10 hours so I may start around 4am on Saturday | |

| Dang, just typed a message and got "no post specified" I HATE when it does that so I will try again. This is my latest toy I got over the weekend: It is also a pellet smoker like my grill and will smoke for up to 24 hours! I got it assembled yesterday and did the burn-in but did not have time to cook something in it so I will do the Boston butt on Saturday. Will probably start at 3AM because it needs about 10 hours to cook then 2 hours of resting time. This one holds 40 pounds of pellets and my pellet grill only holds 5 pounds so I have to feed it every couple of hours. This one will be set it and forget it. I will still use the pellet grill for hotdogs, burgers and steaks because this one does not get hot enough to cook those kinds of meats. My daughter saw cheese in the photo and wants me to try cheese. Not really sure how to do that because if you are not careful you will have a melted mess on your hands! My grill smokes at 180 degrees so cheese on that is not an option. This one can smoke at a much lower setting (not sure how low) so I will have to do some research to see how to do a block of cheese. | |

| Oh wow, really nice looking smoker. Not sure I would be brave enough to try the cheese myself, but I must be possible or else there wouldn't be any smoked gouda! _________________ "I used to be indecisive.......... Now I'm not sure."

| I believe you keep the cheese really cold before you put it in the smoker to help it start. | |
